It’s been a while since I’ve been super excited about a cake recipe.
Sure, I’ve come across many good recipes. There’s a handful of my go-to’s, like my trusty chocolate cake which I almost always use for cake decorating. Come to think of it I’ve actually never posted the recipe up on this blog….
But I digress.
My point is I haven’t really raved on about a cake for a long time. Infact the last time I remember doing so was when I discovered my sour cream pound cake recipe. Which to this day is still one of my favourites I don’t make it often enough. Check it out if you haven’t. You’ll love it!
But today, I’m sharing a recipe that has absolutely stolen the crown of my all time favourite cake! I’m not even a person who chooses favourites so this is kind of a big deal. It’s so good I’ve literally lost count of how many times I’ve made it. And it’s only been three months since I discovered it.
If you’ve been reading this blog over the past couple of months, you’ll probably notice that I’ve been really into recreating things that I’ve tried (or in some cases haven’t even tried). So given how much I enjoy the IKEA Chocolate Oat Balls, it was only a matter of time before I had to recreate this one in my own kitchen!
If you haven’t tried the IKEA Chocolate Oat Balls before, you need to get yourself to your nearest IKEA and buy a pack! It’s essentially a rolled chocolate truffle, but better. Packed with coconut and oats for substance and a strong hit of coffee for that extra kick, what’s not to love?
So apparently 2017 was the year of the Buddha bowl.
I’m not one to stay on trend, so I’m a little late getting on this bandwagon. But I’m loving bowls at the moment. Poké bowls, Buddha bowls, nourish bowls (to a lesser extent, smoothie bowls), you name it! Because hey, it means that eating colourful veggies is finally cool!
In attempt to improve start building up some cooking skills, I went to my bookshelf inspiration and found this Hainanese Chicken recipe, along with many other much more ambitious projects which I’ve yet to start even thinking about collecting ingredients for. I actually thought that this was quite ambitious itself, until I realised how dead simple it was to boil a chicken and mix up three sauces to serve it with. And don’t let the picture fool you- the chicken was so much more smooth and tender than it looks! The only challenge really was to chop it up into nice presentable pieces (of which I had no clue how to do so!).
The rice is amazingly tasty too, though you might not want to let people know that it tastes so great because of the amount of chicken fat in it! 😉
